Apricots goat’s cheese honey & nuts
2 person starter – 20 minutes
Ingredients:
4 ripe apricots, cut in half with stones removed
100 grams goat’s cheese cut into 8 pieces
1 tablespoon liquid honey
2 tablespoons Port, Madeira or Banyuls.
Salt and pepper
4 teaspoons crushed nuts
Preparation:
Place four half-apricots in each of two oven-ready dishes.
Put a piece of cheese on each apricot. Add salt and pepper.
Sprinkle the nuts over each dish, then drizzle over the Port and the honey.
Bake in the over for 10 minutes at 200°C.
