Asparagus, egg and potato

2 person starter – 15 minutes

Ingredients:

400 grams firm potatoes, boiled 10 minutes with mint, cut into dice

4 eggs boiled 8 minutes, peeled  and cut into four

225 grams green asparagus boiled 4 minutes in salted water

1 ½ tablespoons fresh lemon juice

1 ½ tablespoons olive oil

1 ½ tablespoons mayonnaise

Preparation:

Mix together the lemon juice, oil and mayonnaise.

Add the potatoes and stir gently. Add the asparagus and stir again.

Serve decorated with quarters of egg.
