Aspargus clafoutis



Asparagus clafoutis

2 person starter – 50 minutes

Ingredients:

200 grams green asparagus, cut in 1-inch lengths

2 eggs, beaten together

150 millilitres  fresh cream

150 millilitres semi-skimmed milk

150 g goat’s cheese or cottage cheese, mashed with a fork

4 tablespoons plain flour

4 tablespoons cornflour

1 tablespoon chopped spring onions

Butter and flour for preparing the dish

Preparation:

Cook the asparagus in a little water in the microwave for 3 minutes at 800 W.

Drain them. Butter and then flour an oven dish; add the asparagus.

In a bowl mix the eggs with the cream and then the milk.

Incorporate the cheese, then the flour and cornflour.

Cover the asparagus with the cheese mix. Sprinkle with spring onion.

Cook in the over for 30 minutes at 200°C

Serve on individual plates.
