Blueberry and raspberry clafoutis

4 person dessert – 55 minutes

Ingredients:

2 beaten eggs

3 tablespoons caster sugar

A pinch of salt

3 tablespoons plain flour

10 grams soft or molten butter

300 millilitres  semi-skimmed milk

450 grams of mixed blueberries and raspberries

Icing sugar

Preparation:

Whip the eggs and sugar together for 5 minutes.

Add the flour and salt. Mix gently with a wooden spoon.

Slowly add the butter and milk.

Butter an oven dish. Fill with fruit. Pour over the egg mixture..

Bake in the over for 45 minutes at 180°C.

Powder with icing sugar before serving.

[This can be frozen as individual portions]
