Smoked mackerel omelette

2 person main dish – 20 minutes

 

Ingredients:

1 small leek, washed and cut into rounds

1 tablespoon olive oil

4 egg whites, beaten into meringue

4 egg yolks

200 grams smoked mackerel, skinned and pulled into small pieces

10 centimetres of cucumber, peeled and cut into tiny dice

A salad to accompany the omelette

 

Preparation:

Fry the leeks in the oil until soft, then remove from the pan.

Mix the egg yolks gently into the egg whites. Pour into the frying pan at high heat.

Add the leeks, mackerel and cucumber.

Cook until the omelette is just solid.

Serve with salad.
